Recipes: Banana Bread
One of my favorite things to eat pretty much always and especially this pregnancy has been banana bread with peanut butter. I’ve been baking it almost once a week lately, because its easy to whip up with a fork in just one bowl and we usually have all of the ingredients at home.
If you wanna give this loaf your personal touch, you can always add some extra goodies of your preference like blueberries, (white) chocolate chips or even a Nutella swirl.

Ingredients:
3 freckled bananas ( 1 more banana for decoration ;) )
1 egg OR 1 chia egg (soak 2 tbsp of chia seeds in 1/2 cup water)
3 tbsp coconut oil
1/2 tsp ground cinnamon
1 tsp vanilla extract (optional)
3/4 tsp Himalayan salt
1/2 cup maple syrup
3.5 tsp baking powder
3/4 cup plant based milk (if needed)
1 tbsp of nut butter
1 cup almond meal
1 1/2 cup all purpose flour
1 cup oats
1/2 cup pecan nuts
1/4 cup walnut
optional: chocolate chips or white chocolate chips
Step 1.
1. First, preheat the oven to 350 F or 180 C.
2. if you wanna use chia egg: soak 2 tbsp of chia seeds in 1/2 cup warm water until it forms a gel- like texture, the "chia egg". Or you can simply use a regular egg, it’s your choice :)
3. Grease the loaf pan with coconut oil or line with parchment paper.
4. Grab a big bowl and mash the bananas with a fork in it. Add the egg, vanilla extract, nut butter, coconut oil, vanilla, cinnamon, salt, maple syrup, milk and baking powder. Whisk everything together. Then add the almond meal, the flour & oats and stir. Finally, break down the nuts into smaller chunks and fold in to the mixture.
5. Place the dough into the loaf pan. Cut the 4th banana into 2 halves and place on top of the dough (cut side facing up). Decorate with oats and more nuts if you want.
6. Bake for approximately 1 h. When ready, the banana bread will feel firm and the top will be golden brown.
7. When done baking, carefully take it out of the pan and let cool completely before cutting it.
8. Serve with (nut) butter and/or strawberry jam. Or enjoy it plain with a cup of chocolate milk.
